Sweet Potato and Black Bean Chili
Sweet Potato and Black Bean Chili Yield 4 servings, 4 cups each Ingredients: 1 tbsp. plus 2 teaspoon olive oil to sauté 1 large onion, medium diced 1 Poblano pepper, medium diced 4 cloves garlic, fresh, minced 2 tbsp. Chili powder 4 teaspoon cumin 1 tbsp. Chipolte in adobo chopped plus some liquid 1 medium-large Sweet Potato, medium diced ¼ tsp. salt 2 ½ cup Water/ vegetable stock 1, 14 oz. can diced tomatoes 2, 15 oz can Black beans, drained, rinsed 4 teaspoon Lime Juice ½ c. Cilantro, fresh, chopped Method: Heat oil in large wide pot; sauté onions, peppers, garlic, cumin, chili powder, chipotle in adobo; add sweet potatoes, vegetable stock, cover, simmer until just cooked; add tomato product, beans; season to taste. Finish with lime juice and chopped cilantro. Serve with fresh corn bread.
